The toque chef's hat dates back to the 16th century and is believed to have originated in the Greek monastaries where chefs along with other educated members of society took refuge, and in order to distinguish them from the monks who wore black, the chefs wore white.

The varying heights of the roque indicated the rank within a kitchen and traditionally they had 100 folds, which were to represent the many different ways a chef knows to cook an egg!
